Quick Chicken Stir Fry

Ingredients

    1 lb chicken breast
    cut into strips

    2 tbsp vegetable oil

    2 whole bell peppers
    sliced

    2 cups broccoli florets
  • 5
    2 whole carrots
    sliced thin
  • 6
    3 cloves garlic
    minced
  • 7
    1 tbsp ginger
    fresh, minced

    3 tbsp soy sauce
  • 9
    2 tbsp oyster sauce
  • 10
    1 tsp cornstarch
  • 11
    1 tsp sesame oil

Preparation

    Cut chicken into thin strips.

    Slice bell peppers and carrots.

    Cut broccoli into bite-sized florets.

  4. 4

    Mince garlic and ginger.

  5. 5

    Mix soy sauce, oyster sauce, cornstarch, and sesame oil in a small bowl.

Cooking Instructions

    Heat 1 tablespoon oil in a large wok or skillet over high heat.

    Add chicken and stir-fry for 3-4 minutes until cooked through. Remove and set aside.

    Add remaining oil to the pan.

    Add carrots and broccoli, stir-fry for 2 minutes.

    Add bell peppers, garlic, and ginger. Stir-fry for another 2 minutes.

    Return chicken to the pan.

    Pour sauce over everything and toss to coat.

    Cook for 1-2 minutes until sauce thickens.

    Serve immediately over rice.

Additional Notes

Serve over steamed rice or noodles. Feel free to substitute vegetables based on what you have available.
